Nutrition Course Descriptions

Scheduling requirements and limited resources prevent all courses from being offered every term or every year.  Some courses may be offered exclusively via distance delivery. Students develop an understanding of nutrients, their functions, food sources, effects of deficiency, recommended dietary allowances, assessment of nutritional status, practical human nutrition, and nutritional controversies including food fads and fallacies. Prerequisite: None, general understanding of chemistry and human anatomy and physiology strongly recommended.
